Split Top Rotating Column Copper Alembic Stills
With the evolution of time and distilling techniques, this model has been perfected so as to be considered a semi-industrial home distilling unit. The rotating column model is very different from the traditional model in terms of the distilling process and results. It is unique in that it is able to yield a "purer" distillate and is considered a time-saver when you wish to distill various batches.
While the batch and water are mixed together in the traditional Portuguese copper alembic pot, with the rotating column still, the copper pot only functions as a water vapor generator. The batch is not placed in the pot but in the column, thus there is no direct contact with the water.
The column may have one or two copper sieve trays (depending on size) soldered to the column. These perforated copper trays not only separate the batch from the water but also allow the passage of vapors, considered a steam distillation process, ideal not only for alcoholic beverages but also for the distillation of essential oils.
These units are also considered as time-savers as while the water is at boiling point, the distiller can rotate the column to the side, discard the used batch and immediately refill it with a fresh batch, place the column back on the copper pot and proceed with a new distillation. Thus, there is no need to initiate each new distillation with cold water.
If the distiller is not satisfied with the quality or pureness of the distillate from the first distillation, a second rectifying or refining distillation may be carried out with the same unit. For this purpose, the first results are placed in the copper pot, the column is rotated to its side and the alembic head is attached directly on the pot to proceed with the rectifying distillation.
The smaller sizes may be used domestically unlike the larger models which require an adequate distillation area and knowledge by the distiller. Even though these alembic stills are recommended for experienced distillers, this does not mean that those who wish to start with home distilling should feel apprehensive when acquiring one of these models. There are various sizes available up to 300 liters. Models larger than 300 litres are not recommended, as pot is unable to generate the needed vapor to function correctly.
All unions are welded or soldered with lead-free brass or copper depending on location, this is known as a soldered union construction. Thicker copper sheeting is employed in manufacturing these alembics. All connecting parts between the swan neck and the condensing recipient come equipped with rapid brass locking unions to avoid the escape of vapours.
These models may be used for the distillation of alcoholic spirits, essential oils etc, but always bearing in mind that only solid organic materials can be placed in the column. For liquid distillations please refer to our Charentais alembic still.

The separate parts that make up a still have been designed and manufactured to fit together perfectly and seal off all vapours (thus the concave shape of the swan neck head). After years of usage some natural slack may occur between these parts and will need to be sealed off to prevent the escape of vapours. This is achieved with a very simple and rudimentary sealing technique.
