Orange Wine
Ingredients:
- 12 ripe oranges
- 3 Kgs of sugar
- 2 Egg whites
- 11L of spring water
- 4 spoons of yeast
- Quarter bottle of white wine
- Little bit of brandy
Take 12 oranges and strain them until they are juiceless taking care to prevent seeds going in the mixture. Mix the sugar, the well beaten egg whites with the spring water and let it boil for half an hour.
When the foam starts to appear, take it off and then add the orange juice and mix together.
After this, simply add the yeast and let it stand in a pan for 4 or 5 days then place into a cask for approximately 4 weeks. For the first week do not close it so it gets air. After the first week, stop it close. After this period of time, simply transfer the contents into another cask and add the white wine and bit of brandy. Stop it close and in 4 – 6 weeks time it will be ready to be enjoyed.
