Citric Acid is used for correcting the acidity of wine must, fruit mash or water for grain mash. The ideal pH range of a ferment should be between 3.4 and 4.0.

A pH below 4.5 is good since it dramaticlally slows down the growth of organisms which would otherwise contribute off flavours.

Add 1/4 teaspoon increments per results.
