    The Al-Ambiq® decorative pieces presented in this section are perfect for those who cannot resist the aesthetic beauty, charm and sensual curves of these copper stills but do not have the needed space for larger units nor wish to engage in the art of distilling.

    Beautifully hand-crafted with only the finest copper, these items exhibit excellent craftsmanship and quality. They are a unique and exquisite acquisition for any household whether you choose a very high glossy finish or an oxidized, antique look.

    There is a wide variety of decorative alembics to choose from. Sizes vary from miniatures to 90 liters and you will most certainly find a design to please everyone.

    You may choose from simple units, comprised of a copper pot, swan neck and a condensing recipient, up to the functional bottle holder models which are attractive and an original way to serve a brandy or whiskey or any other beverage to guests.

  • Small Distilling Unit...

    This group of small copper stills is identical, in size, to the smaller decorative pieces but they have been made to be functional, in other words, you can distill with them. Just like with our larger units, solders are totally non-toxic and the vapor chamber, or commonly known as swan neck head is made with a longer concave connection to avoid the escape of vapors. (A rye-putty mixture is still needed to seal off these connections – see sealing technique). These small distilling units created by Al-Ambiq®, come with a wood base and a candle wick burner, an alcohol burner or an electric plate depending on model. Certain models include a rapid locking / unlocking brass connection between the swan neck head and the condensing copper coil recipient, avoiding the use of a sealant in this area.

    Sizes range from 0,7 to 2,5. Liters which make them ideal for those who would like to experiment or initiate the art of distillation as well as being an excellent conversation piece. They are very practical due to their very compact size. (Mind you, end results will also be quite reduced.)

    Ideal units to distil liquids, such as wines for obtaining an excellent quality Eau-de-Vie.
    You may also use them to obtain floral waters (known as hydrosols) by distilling a mixture of water with flower petals or other organic materials. As the final results are reduced, we do not recommend these units for the distillation of essential oils.

    Certain models include an internal copper sieve basket. Different fruits, anise, wood, spices, herbs etc, are placed in this basket to add flavorings to the eau-de-vie that is being re-distilled. For example, in the Bavarian region, distillers use juniper berries to flavor their schnapps resulting in a juniper spirit commonly known in the region as "wacholder". Models that come with a candle wick burner may be placed on a stove top as the candle wick burner will not generate sufficient heat to distill. We have also now included a stainless steel thermometer that is perfectly adapted to the size of these models, available now with the product.

  • Distilling Appliance...

    This group of functional copper still appliances is very different from the traditional pot stills in terms of design.

    They are perfect for domestic use, for people who live in apartments or for those who have very limited space, due to their compact size and practicality. Ideal for those who have very little knowledge of distillation but would like to experiment with this art or for the connoisseur who wishes to entertain friends and serve freshly made eau-de-vie after a delightful dinner, or distill a batch of essences to offer to friends at Christmas or any other special occasion. In addition to producing alcoholic spirits these appliance stills are also ideal to distill flower petals, plants and other organic substances to obtain essential oils for aromatherapy, medicinal oils, etc. Use your favourite herbs and spices to distil your own unique liqueur or essential oil (results will be reduced).

    As these Al-Ambiq® apparatuses use a silicone gasket to seal the lid there is no need to use a putty mixture (which can be quite messy), known as sealing technique, as in other models. All joints and seams are soldered with silver solder guaranteeing a lead-free construction. Models include a rapid locking/unlocking brass connection between the lid and the condensing copper coil recipient, avoiding also the use of a sealant in this area. These appliances have quite a graceful design and are perfect for placing on a countertop in the kitchen, living room or dining room. The only additional items needed are alcohol for the wick burner (depending on model) and raw materials to distill.

  • Traditional Riveted...

    These alembic stills have a graceful design based on old Moorish traditions and are widely used throughout the Iberian Peninsula and Southern Europe. The copper pot, one of the basic parts of the still, is of a riveted union construction, meaning it has been constructed in the old traditional way using rivets for joining separate parts together. Any welding is made with brass or copper, depending on location, thus obtaining a non-lead construction. There is a rapid brass locking/unlocking union between the swan neck lid and the condensing recipient to avoid the escape of vapours. The condensing recipient is equipped with a water inlet tube located at the bottom of the condensing recipient and an outlet tube at the top where the water exits. In this manner the water circulates in the opposite direction of the descending vapours.

    The smaller sizes may be used domestically unlike the larger models which require an adequate distillation area and knowledge by the distiller. Even though these alembic stills are recommended for experienced distillers, this does not mean that those who wish to start with home distilling should feel apprehensive when acquiring one of these models.

    Models may be used for the distillation of alcoholic spirits, as is the case in the Iberian Peninsula, essential oils used in preparing medicinal herbal extracts and perfumes, rosewater or whatever your imagination might come up with.

  • Traditional Alquitar...

    The Alquitar is different from the regular alembics in regards to its design. It occupies less space since its bodies fit into a pyramid shape and its helmet has double function – it has in its interior a vapour chamber and at the top the condensation area. This way, the space needed to run a distillation is considerably less. 

    The Premium Alquitars with three bodies allows the user to run a vapour distillation. The ones with only two bodies allows for a simple distillation. The use of a removable sieve in the pot's interior allows the separation of mash and water and facilitates the passage of the vapour. Because the mash and the water is separated, the user can expel the mash and run a new distillation without the water ceasing to boil and there is no need for repeating the entire distillation process again.

    The user can choose if he wants to run a vapour distillation or a simple distillation with the three bodied Premium Alquitars– to do that he only needs to remove the movable sieve from the interior of the pot.

    The Alquitar is favored in certain areas of Portugal and Spain for producing excellent alcoholic beverages (Grappa, calvados etc) that many distillers attribute to the longer distillation period that is required with this distilling apparatus (considered similar to the Charentais in terms of results). For this reason many distillers would not replace their Alquitar with any other pot still.

    The bowl shaped Alquitar head has a semi-spherical interior chamber where vapours gather. This bowl is filled with cold water and when the vapours come in contact with the cold surface they liquify and exit through a spout, commonly known as "Biqueira" in Portugal. Depending on the model and/or size the bowl may have two spouts (in addition to the spout where the alcohol exits), one at the bottom where the cold water enters and cools the condensing chamber and the other on top of the bowl where warm water exits.
    Alquitars are of a soldered union construction, meaning they are constructed in the old traditional way, a tradition that has been passed on from generation to generation. Any soldered unions are welded with brass or copper depending on location, thus obtaining a non-lead construction.

  • Soldered Copper...

Unlike the riveted union construction, the three parts that make up the copper pot (bottom, belly and top) are welded together, and the thickness of the copper used in these alembics is also greater. Any soldered unions may be of either brass, copper or tin - at its highest purity (99,7%), depending on its location, thus obtaining a non-lead unit. This is known as soldered union construction and it guarantees perfect impermeability.

    There is a rapid brass locking / unlocking union between the swan neck pipe and the condensing recipient to avoid the escape of vapours. The condensing recipient is equipped with a water inlet tube located at the bottom of the condensing recipient and an outlet tube at the top where the water exits. In this manner the water circulates in the opposite direction of the descending vapours.

    The smaller sizes may be used domestically unlike the larger models which require an adequate distillation area and knowledge by the distiller.   • Cask Hood Copper Pot...

    These cask hood Al-Ambiq® alembic stills have a graceful design based on old Moorish traditions and are only used in very specific regions such as in the northwest region of Portugal. This distilling apparatus has a larger vapour chamber (the cask hood) and a downwardly inclined spout to the condensing recipient which may account for the higher quantities of distillate obtained in each distillation process. Any drawback in terms of quality can be easily surpassed with a second distillation or refining distillation.

    A copper refining lentil (which substitutes the need for a second distillation process), as an additional accessory, may not be purchased for this model due to its design.

    There is a rapid brass locking / unlocking union between the cask hood spout and the condensing recipient to avoid the escape of vapours. The condensing recipient is equipped with a water inlet tube located at the bottom of the condensing recipient and an outlet tube at the top where the water exits. In this manner the water circulates in the opposite direction of the descending vapours.

  • Split Top Rotating...

    With the evolution of time and distilling techniques, this model has been perfected so as to be considered a semi-industrial home distilling unit. The rotating column model is very different from the traditional model in terms of the distilling process and results. It is unique in that it is able to yield a "purer" distillate and is considered a time-saver when you wish to distill various batches.

    While the batch and water are mixed together in the traditional Portuguese copper alembic pot, with the rotating column still, the copper pot only functions as a water vapor generator. The batch is not placed in the pot but in the column, thus there is no direct contact with the water.

    The column may have one or two copper sieve trays (depending on size) soldered to the column. These perforated copper trays not only separate the batch from the water but also allow the passage of vapors, considered a steam distillation process, ideal not only for alcoholic beverages but also for the distillation of essential oils.

    These units are also considered as time-savers as while the water is at boiling point, the distiller can rotate the column to the side, discard the used batch and immediately refill it with a fresh batch, place the column back on the copper pot and proceed with a new distillation. Thus, there is no need to initiate each new distillation with cold water.

    If the distiller is not satisfied with the quality or pureness of the distillate from the first distillation, a second rectifying or refining distillation may be carried out with the same unit. For this purpose, the first results are placed in the copper pot, the column is rotated to its side and the alembic head is attached directly on the pot to proceed with the rectifying distillation.

    The smaller sizes may be used domestically unlike the larger models which require an adequate distillation area and knowledge by the distiller. Even though these alembic stills are recommended for experienced distillers, this does not mean that those who wish to start with home distilling should feel apprehensive when acquiring one of these models. There are various sizes available up to 300 liters. Models larger than 300 litres are not recommended, as pot is unable to generate the needed vapor to function correctly.

    All unions are welded or soldered with lead-free brass or copper depending on location, this is known as a soldered union construction. Thicker copper sheeting is employed in manufacturing these alembics. All connecting parts between the swan neck and the condensing recipient come equipped with rapid brass locking unions to avoid the escape of vapours.

    These models may be used for the distillation of alcoholic spirits, essential oils etc, but always bearing in mind that only solid organic materials can be placed in the column. For liquid distillations please refer to our Charentais alembic still.

  • Bain Marie Copper...

    The Al-Ambiq® Bain Marie Alembics are similar in design to the professional 130L water bath distilling alembic, the source of inspiration for this alembic, and was conceived especially for distilling botanicals or high sugar content fermented fruit mashes.

    This system has a double chamber; water is placed in the external chamber and the raw product in the internal chamber. The external chamber has a simple pressure release device for maintaining an even pressure and temperature, basically an escape tube with small holes at regular intervals that allows the slow release of pressure. The bain marie concept is quite simple, heat generated at the source is transferred to the water in the external chamber which in turn heats up the internal chamber evenly and in a uniform manner along the base and sides. This double chamber system keeps the organic material or sugar present in a mash from burning. The resultant high quality distillate is clean and pure with no burnt off-taste. During distillation the temperature and level of both the water in the external chamber and product in the internal chamber should be monitored at all times and the alembic should never be left to run dry, water in the exterior chamber should be topped up approximately to ¾ capacity after each distillation run.

    Other features of the Bain Marie Alembic are the discharge pipe with brass screw-on plug, for the removal of spent loads and cleaning. A screw-on plug is also present on the topside of the alembic for filling up the external chamber with water. The columnar head of this alembic is similar to the Cask Hood Alembic though the connecting pipe or swan neck is placed above the head to further purify the ascending distillate vapours.

    These Alembics are manufactured with a thicker gauge of copper sheeting to withstand the pressure generated in the external chamber of the alembic and the whole unit is welded together to reinforce the joints and soldered with brass solder where necessary.

    A word of caution: Care should be taken when using these units, they should never be left unattended and the temperature should be constantly monitored so no excessive pressure is allowed to build-up in the external chamber. The pressure release device may release some pressure but if the water in the system is left to boil uncontrollably hot steam jets may blow out through this device and the excessive pressure may cause the alembic to explode causing injury and burns to those standing nearby.

    These products are made with thicker copper sheetings and therefore we are only able to manufacture them with our Premium line.

    Our Al-Ambiq® Copper Whiskey Stills are suitable for all distilled spirits but especially corn whiskies, grain whiskies and sour mash whiskies! Based on the same design principles as many Scotch whisky and Bourbon whiskey stills, namely The Famouse Grouse, Glengoyne, Old Pulteney, Glenmorangie, Glendronach and Labrot & Graham Woodford Reserve.

    Our whiskey still design is a close replica of the stills once commonly used in Scottish homes until the late 18th Century before prohibition. At that time many households had one of these for domestic use.

    The characteristic features of this Traditional Whiskey Still are the onion head or boil ball, the long conical column and slightly downwardly inclined Lyne arm. The boil ball and column allows some of the vapour to run back as reflux, thus strengthening and purifying the spirit.

    Our 16L whiskey still is machine pressed and then finished by hand. All our other Copper Whiskey Stills are completely handcrafted.

    The use of Copper in the Whiskey industry:
    Only Copper Stills are ever used in making Premium Scotch and Bourbon Whiskies. Copper plays an essential role in Scotch Whisky making, it adds character and sweetens the distillate whereas stainless steel distillates are often flat and insipid.
    Furthermore, Copper removes sulphur compounds present in the wash from the grains that would otherwise pass over to the distillate.

    There is no other craft still on the market that matches our whiskey still for authenticity!

  • Water Sealing Copper...

    This model was developed from a beer fermentation unit we designed by Al-Ambiq® on request some years ago. We then applied this design to our stills, crafting a unique alembic using a practical water sealing technique to facilitate the distiller's task. This modern unit maintains the sensual and graceful curves of the more traditional stills. What is unique about this still is that it uses water to seal off vapours from the interior, thus having no need to use any other sealing technique as in other models. The pot is built with two separate walls on the top side creating a chamber or corridor where the water is placed.

    The inner wall is higher than the exterior one, and this is one of the essential elements of the water sealing system, as this wall must touch the lid to aid in sealing off all vapours. The complete system, independent of its size must be mounted on a perfectly level surface to avoid water spilling from the water corridor when in use.

    This alembic still comes equipped with an interior copper sieve tray and a copper refining lentil with a brass locking system to facilitate mounting and dismounting. Larger sizes, 50 litres up come with a metal support and axle to facilitate the discarding of the used batch. There is also an extension pipe which must be used when using the copper refining or rectifying lentil.

    The two parts that make up the copper pot (bottom and walls) are welded together, and the thickness of the copper used in these alembics is also greater. Any soldered unions may be of either brass, copper or tin - at its highest purity (99,7%), depending on its location, thus obtaining a non-lead unit.commonly know as soldered union construction and it guarantees perfect impermeability. Thicker copper sheeting is employed in manufacturing these alembics. All connecting parts between the swan neck and the condensing recipient come equipped with rapid brass locking unions to avoid the escape of vapours.

    The smaller sizes may be used domestically unlike the larger models which require an adequate distillation area and knowledge by the distiller. Even though these alembic stills are recommended for experienced distillers, this does not mean that those who wish to start with home distilling should feel apprehensive when acquiring one of these models. These models may be used for the distillation of alcoholic spirits, as is the case in the Iberian Peninsula, essential oils for preparing medicinal herbal extracts and perfumes, rosewater or whatever your imagination might come up with.

  • Charentais Copper...

    Reminiscent of exotic and far away places the Charentais Alembic still is considered the most beautiful and graceful of all alembics. Unlike the majority of the other alembics, the charentais stills evolved in the Cognac region of France in the early XVI century when the acidy white Charente wines from this region were first distilled into brandy. At that time, ships from countries bordering the North and Baltic seas would come into the French port of La Rochelle for cargoes of salt and would take on some of the local wines too. Then, to save space in the ships and increase the value of a small cargo, the bulk of the wine was reduced by distillation using this still. Originally the idea was that by adding water, the liquor could be turned back into wine once it reached land again but customers soon decided they preferred Charente brandy, Cognac, to the rather acid wines it replaced. The region of Charente soon became well-know as a brandy producer par excellence.

    The Charentais still is comprised of a characteristically onion shaped wine pre-heater. Wine is placed in the alembic pot and in the wine pre-heater. The wine in the pre-heater is heated by direct fire, as the wine in the alembic pot reaches boiling point, alcohol enriched steam or vapour is formed. The vapour begins to rise up to the alembic dome and out through the swan neck. The swan neck extends through the wine pre-heater, and the hot vapour passing through pre-heats the wine in the pre-heater en route to the condenser where the resultant distillate or "brouillis" (the result from the first distillation) is received. When the distillation of the wine in the alembic pot is complete, the wine in the pre-heater is transferred to the boiler via a connecting pipe, and this also is distilled in a semi-continuous process.

    Once the two quantities have been distilled, this "brouillis" is then returned to the boiler for a second distillation process to produce "a bonne chauffe" – the final product is aged in oak casks where it acquires the distinctive colour and enhanced aroma resulting in a mellow and polished spirit.

    Useful information: All of the charentais alembic still parts are welded together, some parts are soldered together using lead-free tin solder as per our soldered union construction. Thicker gauge copper sheeting is employed in the manufacture of these alembics. All connecting parts come equipped with brass couplings.

    The Al-Ambiq® Charentais alembic still is elegantly crafted using hand-hammered copper and brass, an acrylic wine level indicator is attached to the pre-heater. Many of our customers have remarked on the beauty of the Charentais, stating "it's a dreadful pity to use such an elegant, well-crafted apparatus", and have placed it in a study, living room or wine-cellar on exhibit.

    The separate items that make up a still have been designed and manufactured for a perfect fit and to seal off all vapours. After years of usage some natural slack may occur between the copper pot and the swan neck hood. To seal off any escape of vapours a very simple and rudimentary sealing technique is employed.

  • Reflux Column &...

    Traditional pot stills require high temperatures meaning that the distillate will include a certain percentage of water, making the alcohol content lower and the distillate safe for consumption. This is the commonly used process in Europe and other parts of the world to obtain Cognacs, Whiskeys, Armagnac and other spirits. This process commonly known as a simple distillation process is what gives the flavour associated with drinking alcohol.

    With pot stills when a higher purity of alcohol is desired, a second or third distillation is needed. However at the end of the 19th century the reflux column still was introduced. The reflux still made it possible to process multiple distillations in one single go and obtain a purer product. At the time it revolutionised the production of many valuable petroleum and chemical products that we commonly use today.

    As some of the less volatile components also vaporize, distillation is not capable of separating substances of very similar boiling points to obtain a higher level of purity. To obtain this purity one would need to do many single distillations, collect the vapour that comes off, condense it, clean out the still, and run it through again. This is why pot distillers run double & triple distillations to get into the 80+ % range. But a Reflux column employs a fractional distilling process and allows this to happen continuously. Reflux reintroduces some of the condensate into the column in order to further purify the distillate stream. Purity is improved during distillation by allowing the rising vapour to mingle with the wash at a slightly cooler temperature.

    Our Al-Ambiq® reflux column still is made up of a soldered union construction copper pot and a tall column (the reflux column) which includes a condenser. A brass stopper is located on the top of the reflux column. By removing the stopper you may place a rubber bung and thermometer (included) to control the precise cutting points between the heads, hearts and tails. The water system in addition to being used for the condensing pipe also comes in contact with the reflux column.

    The vapours from the pot (boiler) start to gather in the initial vapour chamber. They then start to travel up the reflux column. When these vapours come in contact with the cold surface created by the water inlet located at the bottom of the column, the heavy less volatile vapours condense and fall back into the pot. This is known as a pre-refining process. As the vapours continue to travel up the reflux column these continue to condense (due to the cooler temperatures of the column) and the liquid cascades back down into the boiler and mixes with the rising vapours. This reflux liquid helps clean the rising vapours and increase the % purity. The larger reflux column stills will have two pre-refining processes, one at the bottom of the reflux column with the water inlet and one at the top of the column where the water outlet is located, as here too the water comes in contact with the column and creates additional condensing of the rising vapours.

    Professional continuous distillation columns have a number of plates introduced in the reflux column to further increase the purity. These are literally large metal plates or trays over which the liquid flows, and the alcoholic vapours bubble up through holes in them. Because some of the less volatile components will also vaporize, these series of plates, which have lower and lower temperatures as you reach the top of the column will condense the less volatile components back to liquid. The number of plates helps to determine the purity of the distillate. The more plates there are in a column, the greater the purity of the distillate. A greater number of plates require more energy. As these plates are quite difficult to design and build and not really suited for small column diameters (less than 30,48cm or1 ft diameter) it is easier to use a Packed Column; where the packing (not included) can be random (e.g. just dumped in there and given a shake), or carefully positioned and stacked.

    The height of packing needed in order to do the same job as an ideal plate is called the HETP - HETP - Height Equivalent to aTheoretical Plate. Smaller HETPs are better than large ones, as it means that for a given column height (say 1m) you end up with more ideal plates, e.g. only 2 plates (87% purity) if the HETP= 0.5m, but 4 plates (92% purity) if HETP = 0.25 m. If you don't have an exact number of plates, that is still OK; you'll end up somewhere proportionally between the two.

    For a hobbyist it is far easier to use common pot scourers (non-rusting stainless steel or copper) instead of packing, as you will be cleaning them frequently (like after every 20L run). Alternatively you may use marbles, stainless steel screws, ceramic raschig rings or copper wool.

    Simply remove the copper cap at the top of the reflux column (which is not soldered) fill this with the desired packing material, depending on the diameter of the column (smaller objects pack together better but be careful, you do not want to block the column off – you need to allow room for the vapour and liquid to flow around the packed items). The packed items will be hotter at the bottom then at the top. As the vapours come in contact with the cooler packed material, the less volatile compounds which have a lower boiling point will condense and fall back. When this liquid suspended in the packing re-evaporates then the resulting vapour is richer in the more volatile components. The packing is there simply to hold intermediate distillate in place so it can be bathed in hot, rising vapour and more volatiles are further extracted from the intermediate distillate. Finally when these vapours pass through the packing and come in contact with the top cooling tube (25L up), the vapours are once again stripped more thoroughly and a purer alcohol is obtained – up to 90%.

    The taller the column the more reflux liquid, the purer the product will be as there is more place for the liquid and vapour to mingle. You will obtain a very clean distillate with little flavour to it – ideal for mixing flavours.

    Useful information: The buyer has two options with this system. The reflux column still may be purchased with separate swan neck tubing and a condensing coil recipient transforming it also into an alembic pot still. You may distill a batch of any type of fruit or other organic material with the reflux column to obtain a with very high % purity alcohol with very little flavour. Consequently, should you wish to add flavouring to your already high % purity alcohol, simply process another distillation in the normal alembic pot and add whatever flavouring you wish – such as oak wood chips.

    Activated carbon filtration is a specialized filtration which removes chlorine and dissolved organic contamination in water by adsorption. When alcohol is carbon filtered any fusel oils and impurities present remain trapped in the carbon particles, if the filtration is done properly what remains is pure neutral ethanol alcohol which is an excellent solvent for infusion with herbs for spirits such as gin, ouzo flavoured vodkas, schnapps and absinthe or addition of Prestige Essences. Most distilled spirits contain impurities and fusel oils, this is what gives each spirit its distinct character, pure alcohol on the other hand is colourless and flavourless.
    If you are distilling a flavourful spirit then carbon filtration is not recommended.

    When alcohol is allowed to flow through the filter at a slower rate, the contaminants are exposed to the activated carbon for a longer amount of time which increases the efficacy.     The use of essences to flavour spirits is not something strange and new to distillers and blenders, traditionally the raw ingredients that impart the distinctive taste to gin and absinthe are infused or soaked in high alcohol spirits so the essential oils present in the herbs dissolve in the alcohol. You can make your own gin and absinthe without having to go through the trouble of infusing the herbs, the essential or fusel oils present in the infused spirit are also present in the essences but in the exact quantities.

    The formulation of a good essence may take many years of research and development before they are ever launched on the market as Prestige Essence. Rum Essence for example is comprised of several base aromatics responsible for the characteristic rum flavour. The rum flavour may be refined and tweaked with the addition of oils, vanilla, oak extract, spice extract, a small percentage of glycerine and cane sugar molasses. Some concentrated rum may also be added to round of the flavour so it is as close the distilled spirit as possible. Caramelised sugar may also be used for fullness and taste.

    You can make your own neutral alcohol by distilling a plain sugar wash in a traditional alembic or alquitar still and filtering the distillate in our activated carbon filtration system. Just follow the directions for our turbo yeasts for distilling a plain sugar wash.

    Should you wish to distil higher alcohol spirits for use with our Absinthe Essence then we would recommend our traditional alembic with refining lentil or reflux column.

    The manufacturing technique allows an easier cleaning and disinfection process.     We have sourced out only the finest oak products on offer for the aging of fine wines and premium spirits that reflect our same commitment to quality, from the most highly regarded family owned cooperage in Portugal. The french oak is sourced from the Allier region in France and the American white oak from renewable oak forests in Missouri, Eastern European oak is sourced from Hungary. The oak is carefully hand selected and aged a minimum of 24 to 36 months outdoors, prior to barrel fabrication.

    Barrel Profiles

    Our cooper has sought to keep abreast of modern developments in the wine industry to ensure they meet market needs. Based on the interaction between wine and oak, three barrel profiles have been developed, they are Tradition, Innovation and Prestige. These profiles are not differentiated based on the origin of the oak but rather on style of toast. It is understood among the cognoscenti that the most significant contributing factor in the whole barrel making process besides how the wood is seasoned is the manner is which the cooper handles the oak. Our cooper employs state of the art toasting technology to deliver consistent flavour and aroma profiles. Toasting time and temperature curves, which reflect the gradual increase in temperature, are carefully monitored by computer with the aid of infrared temperature sensors strategically located alongside the brazier or toasting pot. This method allows for a longer toast with more penetrating heat without blistering. Other factors that differentiate the styles include length of oak seasoning and type of grain.

    The Tradition profile is the house style, the barrels are crafted with carefully selected oak which has air dried a minimum of 24 months. The controlled toasting process and temperature curve takes 35 minutes to complete and results in a characteristic flavor profile with the presence of tannins making the wine more persistent and hints of vanilla, coconut and chocolate.

    Our Tradition profile is recommended for well structured wines and prolonged aging. This line also presents excellent characteristics for the aging of distilled spirits.
    The Innovation profile is made from carefully selected oak air dried for at least 24 months. The controlled toasting process and temperature curve takes 45 minutes to complete and results in a characteristic flavor profile suited to "New World" wines. The tannings present are refined, more rounded and softer on the palate, ideal for short term aging of young and fruity wines. This characteristic profile presents distinct notes of vanilla, coffee and spices.

    All these factors boost the performance of this barrel profile, preserving all the characteristics of the wine and maintaining fruitiness, complementing and enriching the wine's aroma and flavor elements.

    Our Prestige profile is based on a more rigorous selection of extra fine grain oak seasoned outdoors for no less than 36 months. This profile presents excellent characteristics, a perfect symbiosis between oak and wine and is destined for wines that show great potential.

    Due to a carefully controlled toasting lasting up to 60 minutes the tannings present are very balanced and well rounded. The nutty and spicy notes impart smoothness that supports the natural aromas and fruitiness of the wine, the result should be a refined and well balanced premium wine.

    Other considerations when selecting your oak barrels

    French or American?

    French oak is much smoother and less aggressive than American oak. Wines or spirits aged in American oak tend pick up oak flavours at a faster rate and need less aging but wines need more time in the bottle to mellow out harsh aromas. French oak delivers a smooth bouquet and is destined for refined wines and spirits.

    Which toast?

    The choice of toast the winemaker or distiller decides on depends very much on his or her objective in relation to the final product.

    The objective with regard to aging spirits is to extract the maximum amount of toasted aromas, vanilla, caramel etc. which confer intensity to the distilled spirit and improves the quality. A heavy toast is often recommended along with the Tradition barrel profile.

    The choice with regard to wines is rather more complex. A heavy oak aroma profile is not always suited, these have to be smoother or they can overpower the wines' unique characteristics. In general a lighter toast is recommended for white wines so the delicate nature of the wine is not subdued by the oak. Red wines can support the stronger aromas associated with heavier toasts because their natural flavor and aroma profile is more pronounced. Oak also imparts tannings to the wine giving it structure and a greater complexity of aromas, high tannins are characteristic of French oak. Tannings also help stabilize and fix the color of red wines. The medium plus profile is often is the toast of choice for many red wine varieties.

    Four toast levels are available:

    Light toast
    Medium toast
    Medium plus toast
    Heavy toast

    Reconditioned Barrels

    The reconditioning process ensures no wine residue remains in the barrel; the original toast is shaved off completely in a computer controlled tooling process ensuring strict quality control. These reconditioned barrels are also water and pressure tested to ensure they are completely watertight. The reconditioning process together with a sulphur based treatment helps control micro-organisms, mold or fungus growth.

    Oak alternatives

    Craft distillers and winemakers wanting to add character to their wine or distilled spirit but can't afford the luxury of oak barrels now have the option of using oak chips to flavour their spirit. The oak chips are often added during maturation but may also be used in the fermentation stage or distilled with the wash so the oak overtones come over in the distillate.
